I put barnacles in my kimbap. They’re also called percebes, one of the most expensive and dangerous-to-harvest delicacies in the world. After a visit to @Seafoodsourcerer at @aquabestnyc , I brought them back to @Kimbap Lab at @Chelsea Market and made a special percebes kimbap. It might look strange, but the flavor is incredible…like a mix of lobster and clam. They’re not in season right now, so you’ll have to wait to try them. But Aqua Best has some of the best seafood around (they supply many Michelin-starred restaurants) and carry everything from rare, seasonal specialties to everyday staples plus luxuries like lobster and caviar.
